The Best Barbecue in Kansas City, the Barbecue Capital of the World

Send Joe's Z-Man Kit Reheat Video

Each Z-Man Kit will contain the following:
  • Two 1 pound packages of sliced brisket
  • 8 slices of smoked provolone cheese
  • 8 Kaiser buns
  • 16 onion rings
  • 1 bottle of Joe's Kansas City Bar-B-Que Sauce
To reheat and assemble your Z-Man sandwiches, follow these instructions:
  • Open the Z-Man Kit and find the small box containing the onion rings. Keep that box in the freezer until you are ready to bake the onion rings. If you plan to eat your sandwiches within 3 days of receiving your kit, put the remaining contents in the refrigerator. Otherwise, store it all in the freezer, except for the barbecue sauce, which can be kept at room temperature until opening.
  • At least 24 hours before you plan to serve your Z-Man sandwiches, move the brisket, cheese and buns to the refrigerator to thaw. But leave the onion rings frozen until it's actually time to cook them!
  • Preheat oven to 425 degrees Fahrenheit.
  • Remove buns from refrigerator and lightly butter both cut sides of each bun.
  • Place onion rings on a rimmed cookie sheet that has been sprayed with nonstick cooking spray and place in the preheated oven. Bake for 8 minutes them flip each ring individually and continue baking for another 8-10 minutes, until crispy. While the onion rings are baking, continue with the rest of the sandwich preparation.
  • Reheat sliced brisket. (For pork or chicken Z-Man sandwiches, follow the hot water method reheating instructions for these items, available in our reheat guide.)
  • Place 4 quarts of water in a pot and bring it to a boil.
  • Once at a boil, turn off the heat and remove pan from the hot burner. Place vacuum sealed packages of brisket in the water for 10 minutes.
  • While brisket is submerged in the hot water, preheat a skillet or griddle to medium heat. Toast buttered sides of each bun. Wrap toasted buns loosely in a clean kitchen towel to keep warm.
  • With tongs, remove brisket from the water and carefully remove the meat fro the package.
  • Retrieve sliced provolone from the refrigerator and open the package.
  • Now to assemble your sandwiches! (We recommend building and serving all of the sandwiches at the same sitting.)
  • Remove onion rings from the oven.
  • Place a quarter sized dollop of barbecue sauce on the bottom of each bun
  • Use approximately 1/4 of a brisket package (3.5-4 oz.) per sandwich. Pile the meat on bottom bun, on top of the sauce.
  • Add the slice of provolone on top of the sliced brisket.
  • Place two onion rings on top of the sliced provolone.
  • Top with a drizzle of barbecue sauce, then place bun top on the sandwich.
  • Enjoy!
